My "EMACS Manual for ITS Users", by RMS himself, EMACS version 146,17 April 1980 uses the all-upper-case form. It may be spelled as a proper noun ('Emacs') now, but... My general preference is to use capitalization as in original sources (hence UNIX Sixth Edition, but Unix Seventh Edition), but I can see an argument for using the current convention.
